Want a cocktail with your Pad Thai? Look no further than Bay Ridge’s Glow Thai. With cocktails ranging from the Bangkok Daiquiri to the Drunken Gummy Bear, there’s a drink for everyone at this Brooklyn restaurant.
Owner Anthony Loupos lived in Bangkok, Thailand for over two years where he learned about the restaurant and cocktail scene. “I am fascinated by the food because the dishes are both comforting and satisfying” he said. Loupos lost a lot of weight and improved his health during his time in Bangkok.
When Loupos moved back to New York City in 2011, he opened Glow Thai as an extension of himself and love for traveling. He wanted to serve delicious, healthy Thai food along with creative cocktails to his hometown patrons.
Loupos fell in love with Bangkok’s Thonglor neighborhood, a hip area to eat and drink along with a buzzing nightlife scene. Here he discovered an interesting cocktail, which incorporated a popular candy — the gummy bear– at a bar called The Water Library, which used unique molecular gastronomy to craft cocktails.
“One of the cocktails tasted like liquid gummy bears, and the server gave me two gummy bears on a small plate when he brought out my drink,” Loupos recalls. He was fascinated by this cocktail and decided to recreate his own version for Glow Thai.
Glow Thai uses authentic Thai ingredients ranging from Thai basil to house-made coconut milk on its cocktail menu. The Chunky Monkey features banana, coconut milk and rum.The Thaigarita uses muddled Thai chili, tequila, triple-sec and fresh lime juice. Try one in Brooklyn or make a candy cocktail for yourself!
Drunken Gummy Bear Recipe
1. Create a gummy bear and vodka infusion.
8 oz gummy bears
350 ml vodka (use high quality vodka for better results)
Place gummy bears and vodka in glass container.
Infuse overnight, mixing occasionally.
Mixture should turn a light pink color.
2. Freeze gummy bear infused vodka.
Glow Thai uses liquid nitrogen to freeze gummy bears and then smashes them. For the home recipe, Loupos suggests freezing and cutting the gummy bears into small pieces.
3. After cutting gummy bears, the cocktail is simple to craft and uses a typical daiquiri recipe:
1 1/2 oz vodka
1 oz gummy bear vodka infusion
3/4 oz lime juice (fresh squeezed)
1 oz simple syrup
Shake all ingredients and garnish with two regular gummy bears. Enjoy.
